Leeds mental health nurse writes new plant-based cookbook in aid of the NHS

Faye Phillips, 34, of New Farnley, began following a plant-based lifestyle in 2017 and decided to put pen to paper and write down her culinary creations in a bid to help support the NHS where she also works as a mental health nurse.
Her book, The Pumpkin Pantry, has now been released on Kindle via Amazon and is free of charge but with a £2 requested donation to NHS Charities Together.

Hide AdFaye, who has lived in Leeds since 2016, says she loves “messing about in the kitchen” and experimenting with new ingredients and the book has been a "labour of love" - and all for a good cause.
She said: “In these difficult times, I feel we should give something back to the NHS, where people are putting their lives on the line for us every day and this is a charity that is close to my heart.”
The book is aimed at anyone who is interested in a vegan lifestyle and she hopes helps to demonstrate that plant-based food can be as delicious as any other cuisine.
Faye said: “The book is intended to show those that are considering reducing or cutting out meat that there are appetising and tasty dishes from all around the world that they can cook at home and enjoy.

Hide Ad“It might also surprise some carnivores who thought they couldn’t live without their steak or bacon.”
Inspiration for the 91 recipes in the book came from adapting existing non-vegan recipes from around the world, including from African and Asian countries.
Recipes include a Chinese ‘fakeaway’ section, a Turkish-inspired ‘Lachmucan’ pizza and an African peanut stew.
